Japanese Sweet Potatoes

One of our favorite breakfasts. So rich in vitamin c, fiber and potassium! These are Japanese sweet potatoes or 고구마. Choose ones that feel rock hard and are rich purple. Fill pot with 1.5 cups of water, insert steam rack and position 2-3 medium-sized goguma inside. Set the vent to sealing and put on manual for 30m at high pressure. Quick release and cut in half lengthwise and scoop out the flesh with small spoons! This is great to put in the night before and set the timer to finish when you wake up!

Instant Pot Goguma (Sweet Potato)

Ingredients

  • 2-3 medium goguma

Instructions

  1. Fill pot with 1.5 cups of water, insert steam rack and position 2-3 medium-sized goguma inside.

  2. Set the vent to sealing, close/lock lid, and put on manual for 20m at high pressure. 

  3. Quick release, cut off ends (too fibrous), and cut in half lengthwise and scoop out the flesh with small spoons!
