Instant Pot Korean Beef/Rice Cake Soup

If you've ever tried sullungtang, gomtang, or kalbitang, you know how hearty and comforting it is to have a giant bowl of beefy soup and rice. I forgot to prep lunch before leaving for church, so in ONE MINUTE (!!!), I just Instant Potted some frozen beef with sesame oil, onions and garlic, and it was so satisfying and ready to eat as soon as we walked in the door! Of course this would taste even better with bone-in beef parts!

Ingredients

  • 1 lb of frozen beef stew meat
  • 3 TBSP of sesame oil
  • half an onion
  • 5-6 cloves of garlic
  • salt and pepper to taste
  • 2-3 beaten eggs
  • shredded seasoned/roasted seaweed
  • green onions optional

Instructions

  1. Drizzle some sesame oil in the pot. Add beef, onions and garlic. Season with salt/pepper and brown on all sides. Add 5 cups of water. Close/lock lid and set pot to "Stew/Meat" for 35 minutes and natural pressure release for 10 minutes.

  2. When meat is done cooking, open lid, and set pot to Saute. Press "Adjust" until "More" lights up. This makes it heat at a higher temp. When soup is bubbling, add rice cakes and stir. Let cook for 5 minutes.

  3. Stir in 2-3 beaten eggs and swirl gently for a minute. Add a spoonful of gook ganging (soy sauce for soup). Season with salt and upper to taste. Ladle into bowls, and top with shredded gim and green onions. Serve immediately!

Recipe Notes

**To make this into rice cake soup, or dduk gook, when meat is done cooking, open lid, and set pot to Saute. Press "Adjust" until "More" lights up. This makes it heat at a higher temp. When soup is bubbling, add rice cakes and stir. Let cook for 5 minutes. Stir in a few beaten eggs and swirl gently for a minute. Add a spoonful of gook ganging  (soy sauce for soup). Season with salt and upper to taste. Ladle into bowls, and top with shredded kim (roasted, seasoned Korean seaweed) and green onions. Serve immediately!
